Have you seen the viral cheese stuffed sweet potatoes making the rounds on social media? I regret to inform you that they're delicious and here's why: Roasting the potatoes caramelizes the sugars which helps to sweeten and deepen their flavor, and using a sharp cheddar cheese or mild gouda makes a cheesy, unctuous, and satisfying snack (or girl dinner 💁🏻♀️).
